Fluffy Banana Muffins
These fluffy banana muffins are easy to put together with a few ripe bananas and ingredients you may already have at home. You can enjoy them plain or add mix-ins like walnuts, pecans, or even chocolate chips.
These muffins are very similar to my banana bread recipe. The main difference is the baking time. Muffins bake up in a shorter time so they are convenient, specially if you are in a hurry. They are also a great snack or main dish in a school lunch box or you can also use them as a snack after school.
Fluffy Banana Muffins

* 5 ripe bananas, mashed
* 6 tbsp butter, melted
* 3 tbsp vegetable oil
* 1 cup granulated sugar
* 2 eggs, beaten
* 3 teaspoon vanilla
* 1 1/2 teaspoon baking soda
* 3 teaspoon baking powder
* 1/2 teaspoon cinnamon
* 1/8 teaspoon salt
* 2 cups all-purpose flour
* Chocolate chips to sprinkle on top of the muffins
Directions
- Preheat your oven to 350 degrees Fahrenheit
- Melt your butter in a microwave safe bowl, make sure the bowl is big enough to use as a mixing bowl
- Once butter is melted, add all banana into the same bowl and begin to mash them. Once the bananas are mashed add in your eggs, vanilla, and vegetable oil. Use a spatula or wooden spoon to mix slightly.
- Add in the flour, baking soda, baking powder, sugar, cinnamon, and salt. Mix until all flour has been incorporated to the wet ingredients.
- Line a muffin/cupcake pan with cupcake liners. Use a spoon or ice cream scoop and fill the baking liners halfway full.
- Bake for 20-25 minutes, muffins are ready when the sides are golden brown and the center is springy.
Notes
- Feel free to add chocolate chips at the top or any type of nuts you may like.
