Hi friends! So a few months ago I showed you some ice cream cone cupcakes that I made in collaboration with Sprinkle Pop for their fall sprinkle mix reveal. I didn’t share the recipe with you because I wasn’t sure that it was something you wanted to see. But I’ve finally documented the recipe and here it is.

ingredients

  • 1/3 CUP chopped apples
  • 1 tsp brown sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp apple pie spice
  • 1 TBSP butter
  • 2 TBSP milk
  • 1 TBSP brown sugar
  • 1/4 tsp vanilla
  • 1/4 CUP all purpose flour
  • 1 large egg
  • 1/2 tsp baking powder

  1. in a mug, combine apples, brown sugar, and cinnamon plus apple pie spice, place in the microwave for 30 seconds
  2. remove from the microwave and stir in butter immediately so that it will melt
  3. add milk, brown sugar, vanilla, all purpose flour, egg, and baking powder, and whisk
  4. microwave between 1-1.5 seconds, be sure to watch it because the cake will get fluffy and potentially spill out your mug. I suggest using a biiiiiig mug.
