Best Vanilla Cake | Very Cherry Cakes Recipe

Soooo…I know, you’re probably like “sure Cinthia here you go, ANOTHER pinterest BEST VANILLA CAKE RECIPE…” and I totally understand because I rolled my eyes too when I even though about this recipe. But the main reason for doing this is to ensure my cakes are moist and delicious! I used to simple syrup my cakes and it really was a pain….and I always wondered if my cakes would eventually dry out.

So here’s my recipe:

FLUFFY VANILLA CAKE RECIPE

INGREDIENTS

3/4 C unsalted butter (room temperature)

2 1/2 C granulated sugar

4 large eggs (room temperature)

3 C AP Flour

2 3/4 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 1/2 C whole milk (room temperature)

1 TBSP vanilla

3/4 C vegetable oil

-Beat unsalted butter, sugar, and eggs for approximately 3-4 minutes on medium speed until they become fluffy

-In a separate bowl, whisk all dry ingredients; all purpose flour, baking powder, baking soda, and salt

-Stop the mixer and add in the vanilla (vanilla can also be added to milk, this ensures that it is well distributed throughout the entire batter, if you add it into the bowl when the dry ingredients are already in you run the risk of the vanilla clumping up.

-Alternate adding in the dry and wet ingredients into the mixer in this fashion; dry, wet, dry, wet, dry (add in the dry ingredients in three part, and the wet ingredients in two parts), and mix only until you no longer see flour. Make sure to pause from time to time, turn off the mixer and scrape the sides of the bowl using a spatula to ensure that all the ingredients incorporate.

-Put your mixer on low and slowly add in the vegetable oil and mix only 10-15 seconds until the oil incorporates into the batter.

This vanilla cake us moist, and fluffy. Perfect for a summer event or indoor party.
